This light and crunchy salad suc­cessfully marries the bitterness of the horseshoe leaves with the sweetness of -the peanuts and sesame seeds. In Myan­mar, the leaves are considered to have medicinal properties and are believed to be especially good for the kidneys.

1/4 cup (60 ml) oil, for deep-frying

12 cloves garlic, sliced

30 g (1 /4 cup) dried shrimp, soaked 4 tablespoons finely sliced onion, soaked

100 g (2 cups) horseshoe leaves (sub­stitute any green leaves such as penny wort leaves or daikon cress), washed 2 teaspoons fish sense

2 teaspoons ground, roasted peanuts

1 tablespoon roasted sesame seeds

2 birds-eye chillies, finely sliced 1 teaspoon lime juice

Heat the oil and deep-fry the garlic till crisp. Remove the garlic and retain the oil. Drain the dried shrimp and blend to a powdery fluff, Drain the onion slices. Combine all the ingredients, including 1 teaspoon of the garlic-infused oil, on a large plate and toss well.
